Recipe Share: Low(er) Fat Zucchini Chocolate Chip Cookies

If you planted zucchini in your garden, then you are probably like me and have more zucchini than you know what to do with. Or maybe your neighbor has an abundance and is sharing with you. So here's a sweet way to use it up and sneak some veggies into your kids too.

Low(er) Fat Zucchini Chocolate Chip Cookies

1 c sugar
1/4 c butter
1/4 c applesauce
1 egg
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cloves
1 tsp cinnamon
2 c flour (whole wheat works too)
1 c oatmeal (non-instant)
1 c grated zucchini
1 c chocolate chips (I think Guittard are the best)

Cream together sugar, butter, applesauce, and egg. Add dry ingredients. Add zucchini and chocolate chips. When well blended, let sit for at least 10 minutes. Spray cookie sheet with PAM and drop by spoonfuls on to cookie sheet. Bake at 375 degrees F for 10-12 minutes. Makes about 3 dozen.

yum they look good though i would sub honey for sugar and unsweetened carob chips for chocolate chips. but you know me!

Yummy recipe, though I think it's better suited for raisins than chocolate chips. Either way, it's a great way to eat a cookie! Thanks for sharing!

Thanks for this recipe! This is the first year I've done a garden and I let the zucchinis get way to big to just eat, so I made this recipe and they are yummy. Plus I feel a little less guilty eating them. My favorite recipe for zucchinis is this one that my sister in law gave me and it's a chocolate chip zucchini cake with a light glaze. It's too yummy, if you ever want it let me know.
